NON-ALCOHOLIC COCKTAIL
True Twilight
True Twilight' is an exciting alcohol-free cocktail with the full flavour of Mokum Dusk True Blend, fresh lemon juice, honey syrup, fig jam and a touch of chilli. The recipe is a non-alcoholic variation on the famous 'Cosmopolitan', which is made from vodka, orange liqueur, lime juice and cranberry juice. We have replaced the cranberry juice with fig jam for a full, deep flavour. And instead of orange liqueur, we use a mild honey syrup. The red pepper accentuates the spicy character of Mokum Dusk True Blend and gives this cocktail a deliciously complex taste sensation.

INGREDIENTS
- 60 ml Mokum Dusk True Blend
- 20 ml lemon juice
- 15 ml honey syrup
- 10 ml fig jam
- Red chilli
- Fresh fig
PREPARATION
- Place the cocktail coupe in the freezer (5 minutes) or scoop in some ice cubes to pre-cool (stir the ice cubes for 8-10 seconds for faster cooling);
- Open the cocktail shaker;
- Fill the bar measure with 60 ml Mokum Dusk True Blend and pour into the cocktail shaker;
- Use the bar spoon to add 2 scoops of fig jam to the shaker;
- Fill the bar measure with 15 ml of honey syrup and add it to the mix in the shaker;
- Cut the lemon into 2 equal parts and squeeze out half of the lemon;
- Fill the bar measure with 20 ml of freshly squeezed lemon juice and pour it into the shaker;
- Cut off a piece of the chilli pepper (about 1 cm) and add it to the mix;
- Stir the mix in the shaker for 8 - 10 seconds with the bar spoon;
- Add plenty of ice cubes to the cocktail shaker and close it carefully;
- Shake the ingredients briefly and powerfully (8 to 12 seconds);
- If you get a frost on the outside of your shaker, your cocktail is at the right temperature;
- Remove the glass from the freezer or remove the ice cubes and any melting water;
- Open the cocktail shaker to pour the cocktail and use the strainer if you do not want pieces of fruit in your cocktail;
- Cut a quarter out of the fresh fig and make an incision in the back with the knife;
- Place the fig with the notch on the rim of the glass.
TIP 1
You can make honey syrup quite easily yourself. Always use the following proportions:
2 parts honey to 1 part water. Put the honey and hot water in a small bowl. Stir well until you get a nice smooth syrup. Leave the honey syrup to cool. You can keep the rest in a closed bottle in a cool and dark place.
TIP 2
In principle, it does not matter in what order you mix the ingredients, as long as all the ingredients are added in the right proportions.

Pay attention to your technique when shaking: Always shake lengthwise (top to bottom) for best results.
