Dusky Dove

Dusky Dove' is a deliciously fresh, easy-to-prepare non-alcoholic cocktail with Mokum Dusk True Blend, grapefruit juice and a touch of chilli. The recipe is inspired by the Mexican cocktail 'Paloma', which is prepared with tequila and grapefruit juice or sparkling water with a grapefruit flavour. The name is a tribute to the 'Paloma' - which means 'dove' in Spanish. Its fresh bitterness makes it a great aperitif.

  • Long drink glass
  • Barmaatje
  • Sharp knife
  • Vegetable peeler
  • Hand press
  • Bar spoon or long spoon
  • Grater
  • Ice cubes

INGREDIENTS

  • 60 ml Mokum Dusk True Blend
  • 25 ml grapefruit juice
  • 25 ml Pinky Rose Chili Grapefruit syrup (tin available at www.pinkyrose.nl)
  • 100 ml sparkling water or soda water
  • Fresh mint
  • Grapefruit peel
  • Fresh nutmeg

STEPS

  1. Fill the long drink glass with lots of ice;
  2. Fill the bar measure with 60 ml Mokum Dusk True Blend and carefully pour it over the ice;
  3. Use the peeler to make a string of grapefruit peel and keep it aside for the garnish;
  4. Cut the grapefruit and squeeze out about a quarter of a grapefruit;
  5. Fill the bar measure with 25 ml of fresh grapefruit juice and pour into the glass;
  6. Fill the bar measure with 25 ml Pinky Rose Chili Grapefruit syrup and add it to the mix;
  7. Use the bar spoon to gently stir the ice cream and the ingredients;
  8. Keep stirring gently while adding 100 ml of sparkling water to the glass;
  9. Stir carefully again for an optimal taste experience (8-10 seconds);
  10. Squeeze the grapefruit peel to add the aromatic, essential oil for extra flavour;
  11. Garnish with a sprig of mint and the grapefruit peel;
  12. Use the grater to sprinkle fresh nutmeg on top for some extra bite.
